Creamy Kipper Carbonara

A fantastic low-cost alternative to Crab Linguine

Kippers are cold smoked Herring; one of the most abundant and important fisheries in the UK. All of our Herring are from stocks certified sustainable by the Marine Stewardship Council, are caught by our own vessels, hand-filleted and smoked in a traditional way over a combination of hard and softwood. Herring also has high levels of Omega 3 so is recommended as part of a regular diet.

ingredients

  • 400g spaghetti
  • 2 utterly kipper fillets
  • 2 cloves garlic, crushed
  • 4 egg yolks
  • 2 large handfuls grated cheese (half mature cheddar, half Parmesan)
  • Splash of milk (optional)
  • Salt and pepper, to taste

method

Serves 4

  1. Bring a pan of salted water to a rolling boil and add enough spaghetti for 4 people.
  2. Put 2 utterly kipper fillets into a hot pan skin side down. After 2 minutes add a couple of crushed garlic cloves. Fry the kippers for a further minute, turn and cook the other side for three minutes.
  3. Remove kippers from the heat, peel off the skin (though many do enjoy the skin when crispy) and flake into bite size portions. Put kipper pieces back into the pan with the heat off.
  4. Meanwhile combine 4 egg yolks with two large handfuls of grated cheese (half mature cheddar and half Parmesan is our recommendation). You may wish to add a few splashes of milk as well.
  5. Once cooked, ladle the spaghetti into the pan with the kippers. Small amounts of residual water will help make the dish creamy.
  6. Pour the beaten egg and cheese mixture into the pan and combine.
  7. Serve and season to taste!
