Cornish Sardines in Panko Breadcrumbs

Cornish Sardines are an abundant, wild, British species caught by small low-impact inshore boats.

Sardines are naturally high in Omega 3 oils and as such are recommended as part of a healthy diet. The vast majority of British sardines are exported to overseas markets whilst the majority of sardines consumed in the UK are imported from Morocco and Portugal. Continue to support the British industry by buying Cornish Sardines when possible.

Serve them on their own with sweet chilli sauce as a starter or eat them as a ‘proper’ fish finger sandwich.

ingredients

  • Cornish Sardines (2 butterfly fillets per person for snack/starter, 3-4 for a light meal)
  • Salt and pepper
  • Flour, for rolling
  • 1 egg, beaten
  • Panko breadcrumbs, for coating
  • Vegetable oil, for shallow frying
  • Sweet chili sauce, for serving

method

    1. Use 2 butterfly fillets per person as a snack/starter or 3-4 for a light meal.

    1. Wash the Sardine fillets to remove any scales. Pat dry with a kitchen towel.

    1. Season with salt and pepper and roll flour.

    1. Dip the fillets in the egg bowl.

    1. Roll fillets in Panko breadcrumbs (shaking off the excess). Panko breadcrumbs absorb less oil and keep the fish more crispy.

    1. Shallow fry in very hot oil for 3-4 minutes until golden brown.

    1. Remove the fillets from the oil allowing them to drain for a few moments on a kitchen towel.
